Your can launch right from the dash assuming you use freestyle if you use metro/nxe then you may need to use xell or xexmenu but you will also need to ensure you use the xex version of Genesis360 I use the later version which is a god package however placing this in the right place eg content/0000000000 would probably have it show in nxe/metro.
Anyway this is how I did it which works fine for me.....
FTP to your xbox and create an Emus folder
Download Genesis360 and Snes 360 they probably have readme.txt files so give them a read I "think" I got them from xbin$
Genesis360 is layed out like so.....
Hdd1 / Emus / Genesis360 / FFED7300 / 00007000 / 00001039.data <----- this is the Emulator
Hdd1 / Emus / Genesis360 / Preview <----- Not sure whats here might not even need it,
Hdd1 / Emus / Genesis360 / Roms <----- Roms in here, cant remember if individually zipped roms work, test with one.
Snes360 is layed out like so.....
Hdd1 / Emus / Snes360 / ???????.xex <----- This is the Emulator I imagine its "default.xex" and there are loads more files in here
Hdd1 / Emus / Snes360 / media / <----- Lots of pictures and music to make the emulator look, sound and maybe even smell nice.
Hdd1 / Emus / Snes360 / Preview / <----- Again not sure whats here might not even need it.

I asked about this once an no-one wanted to help but then I realised once you have the files downloaded its pretty easy to work out yourself.
Edit, you need to add the EMUS folder in the scan settings, ticking the emulators box on the left and right and I think I had to use level 3.
If its not working post back and ill check when its in front of me.
Second edit, I just thought the preview folder might be there becouse I used a custom icon and box art for them both using the freestyle web admin page.
